Instructions

  • In a mixing bowl, combine the whole wheat flour, lukewarm water, and active sourdough starter to make the sourdough starter.
  • Allow it to sit at room temperature for 8-12 hours or overnight, covered with a cloth.
  • In a large mixing bowl, combine the all-purpose flour, salt, and lukewarm water to make the dough.
  • Combine the sourdough starter and olive oil in a mixing bowl.
  • Mix everything together until a smooth dough forms.
  • Knead the dough for 10 minutes, then cover and set aside for 1 hour.
  • Preheat the oven to 400 degrees Fahrenheit (200 degrees Celsius).
  • Using parchment paper, line a baking sheet.
  • Cut the dough into eight equal pieces.
  • Roll each piece into a 12 inch (30 cm) long rope.
  • Form a circle with the rope and pinch the ends together to form a bagel shape.
  • Repeat with the rest of the dough.
  • Combine the chopped olives, chopped cherry tomatoes, and sesame seeds in a shallow bowl.
  • Brush each bagel with water before dipping it into the topping mixture, pressing it onto the bagel to ensure it sticks.
  • Bake the bagels for 20-25 minutes, or until golden brown, on the prepared baking sheet.
  • Warm or at room temperature, serve.
