Instructions
- In a mixing bowl, combine the whole wheat flour, lukewarm water, and active sourdough starter to make the sourdough starter.
- Allow it to sit at room temperature for 8-12 hours or overnight, covered with a cloth.
- In a large mixing bowl, combine the all-purpose flour, salt, and lukewarm water to make the dough.
- Combine the sourdough starter and olive oil in a mixing bowl.
- Mix everything together until a smooth dough forms.
- Knead the dough for 10 minutes, then cover and set aside for 1 hour.
- Preheat the oven to 400 degrees Fahrenheit (200 degrees Celsius).
- Using parchment paper, line a baking sheet.
- Cut the dough into eight equal pieces.
- Roll each piece into a 12 inch (30 cm) long rope.
- Form a circle with the rope and pinch the ends together to form a bagel shape.
- Repeat with the rest of the dough.
- Combine the chopped olives, chopped cherry tomatoes, and sesame seeds in a shallow bowl.
- Brush each bagel with water before dipping it into the topping mixture, pressing it onto the bagel to ensure it sticks.
- Bake the bagels for 20-25 minutes, or until golden brown, on the prepared baking sheet.
- Warm or at room temperature, serve.
