- Combine the warm water, sugar, and yeast in a large mixing bowl.

- Knead the dough for 10 minutes on a floured surface, or until it is smooth and elastic.
- Cover the dough with a damp towel in a greased bowl.
- Allow it to rise for 1 hour in a warm place.
- Preheat the oven to 425 degrees Fahrenheit.
- Using parchment paper, line a baking sheet.

- Poke a hole in the centre of each ball with your finger and stretch the dough to form a bagel shape.
- A large pot of water should be brought to a boil.
- To the boiling water, add the sesame and poppy seeds.
- Boil the bagels for 1 minute on each side before transferring them to the baking sheet.
- Whisk together the egg and water in a small bowl.
- Brush the egg wash onto each bagel and top with sesame and poppy seeds.
- Bake the bagels for 20-25 minutes, or until golden brown and thoroughly cooked.
- Before serving, let the bagels cool on a wire rack.
