These freshly baked everything bagels are the ideal way to start the day. They're chewy and flavorful, with a tasty topping of spices and seeds. Best of all, they are simple to prepare at home.

- Combine the warm water and yeast in a large mixing bowl.
- Mix in the bread flour, brown sugar, and salt until a dough forms in the bowl.
- Knead the dough for about 10 minutes on a floured surface, or until it is smooth and elastic.
- Place the dough in a greased bowl and shape it into a ball.
- Cover with plastic wrap and set aside for 1 hour to rise.
- Preheat the oven to 425 degrees Fahrenheit (218 degrees Celsius).
- Divide the dough into 12 equal pieces and shape each into a ball.
- Poke a hole in the centre of each ball with your finger and stretch the dough to form a bagel shape.
- Bring a large pot of water to a boil over high heat.
- To the water, add the everything bagel seasoning.
- Cook for 1-2 minutes on each side, or until the bagels float to the surface.
- With a slotted spoon, transfer them to a baking sheet lined with parchment paper.
- Brush the beaten egg on top of each bagel and top with more everything bagel seasoning.
- Bake for 20-25 minutes, or until the bagels are golden brown and cooked through.
- Remove the bagels from the oven and set aside for a few minutes to cool before serving.
